Unfold the foil and slice the meat into thin slices.

Wash the salad and ramps thoroughly, then dry them very well. Tear into large pieces and place on a plate.

Place the beef slices on top, along with thinly sliced onion, halved tomatoes, chopped wild garlic greens, and capers. Sprinkle the salad with good white wine vinegar or lemon juice and season with freshly ground pepper.
