
Olive salad
Description
The recipe won't take much time. Cooking in summer is simultaneously very easy and very challenging. Easy—because you don't need to prepare elaborate meat dishes, which are completely unappealing in hot weather. Challenging—because you need to make something both light and nutritious. This olive salad is a perfect example of a great summer dish. It's very light, yet quite nutritious and filling. As for taste—I'll say nothing, the combination of olives and goat cheese is simply magical :) Serve it at the table.

Wash the cherry tomatoes and cut them in half.

Cut the cheese into cubes with sides about 1 cm.

Cut the olives in half (I used both black and green ones, but you can use only black or only green—this won't affect the salad's taste).

Finely chop the onion.

Wash, dry, and finely chop all the herbs.

Remove the zest from the orange and lemon.

In a salad bowl, mix everything we've chopped and combine with olive oil.

Season with pepper (no need to add salt, as olives are salty enough on their own) and mix once again. The olive salad is ready!
