
Scallop salad
Description
The recipe won't take much time. Sea scallops are a delicate product and considered a delicacy. They are very tender, with a slightly sweet flavor. I sear them for just 30 seconds on each side. They pair well with other seafood, fruits, and salads. They're used in soups and various appetizers. Serve at the table.

1. I put both types of lettuce into a colander and rinse them under a stream of cold water, then leave them aside to drain.

2. Wash and peel the mango, then cut the fruit into small cubes.

3. Pour the cream into a saucepan, place over heat, add mango puree and mango cubes immediately after boiling, stir constantly and cook for 1-2 minutes, season with salt and pepper to taste.

4. I thoroughly wash the lime, then grate the zest from it using a special grater (or a regular fine one).

5. Squeeze the juice of the whole fruit into a saucepan and mix thoroughly.

6. I place the dried salad leaves onto a plate and spread them out.

7. I thoroughly wash the scallops and dry them well with a paper towel, then cut them into small pieces. I heat a pan with olive oil until very hot, add the scallops to the hot surface, and sear them for 1 minute. At the very end, I season with salt and pepper, and add the zest.

8. Wash the grapefruit, separate it into segments, remove the white pith, and cut into pieces the same size as the mango. Place the grapefruit and scallops on top of the salad, then drizzle with the prepared sauce.
