
Seafood salad
Description
A simple dish to prepare. Seafood salad is light yet filling. The special citrus juice-based dressing adds a pleasant tanginess. I serve the dish on a bed of salad leaves with lemon slices. Serve chilled.

Step 1
I pour 3-3.5 liters of water into a pot, add white wine, pepper, salt, a couple of garlic cloves, and 1 cup of lemon juice, then bring the liquid to a boil.

I clean the lobsters and cut them into large pieces. I peel the shrimp (leaving a few for garnish) and chop them coarsely. I put everything into boiling water and cook for 3-5 minutes, then remove and transfer to a bowl.

I clean the squid and cut them into rings, then place them in the same water, add the cut cod fillet and cook for 2-3 minutes, then remove. I combine all the seafood and cool them.

For the sauce: I pour olive oil into a bowl, add 1 cup each of orange and lemon juice, squeeze in several garlic cloves, and add chopped parsley. I wash the oranges, peel them, separate into segments, remove the thin membranes, cut into large pieces, and add to the bowl with the sauce, then mix well.

I wash and julienne the carrots and celery, peel the onion and slice it thinly into half-rings.

I mix part of the sauce with the chopped vegetables, and the rest with the seafood, then let it marinate for several hours.

For serving: wash and dry the salad leaves, place them on a plate, arrange the marinated vegetables in the next layer, then place the seafood on top. Garnish with lemon and whole shrimp.
