
Salad with mussels and tomatoes
Description
A simple dish to prepare. The mussel and tomato salad comes together in no time if you have a jar of marinated mussels on hand. However, you can also use fresh seafood, sautéing them for 3–5 minutes in a pan with vegetable oil. You may substitute Chinese cabbage with spinach or a mixed salad greens blend, and replace mayonnaise with sour cream or a lemon-based dressing. Serve chilled.

Prepare the listed ingredients. Peel the onion and rinse it with the tomatoes under water.

Rinse the cabbage and cut the leafy, non-stiff part into slices or strips, whichever you prefer. Salt the cut pieces and gently rub them by hand in a salad bowl until softened.

Peel the onion and slice it into half-rings, cut the tomatoes into wedges, removing the green cores. Place the sliced vegetables into a salad bowl.

Add mayonnaise of any fat content or a lemon dressing with olive oil, a pinch of ground black pepper, and mix everything.

Drain the marinade from the mussels and add them to the salad. If desired, the dish can be mixed once again or garnished with chopped dill, parsley.
