
Salad with marinated mushrooms for the Year of the Dragon
Description
The recipe won't take much time. You can optionally add garlic or pickled onion to this salad. Instead of broccoli, finely chop fresh herbs (parsley, cilantro, or dill) and use them to top the salad. Serve at the table.

Prepare all the ingredients.

Boil the carrots and potatoes in their skins until cooked. Let them cool completely.

Peel the carrots and potatoes, then grate them on a coarse grater.

Chop the marinated mushrooms in a blender into small pieces. Grate the pickled cucumber on a coarse grater. Add to the vegetables in a bowl.

Dress the salad with mayonnaise, salt and pepper to taste.

Separate the broccoli into small florets and boil for 4-5 minutes. Then plunge into cold water to preserve their bright green color. Drain in a colander and pat dry slightly.

Pulse only the broccoli florets (without stems) in a blender to form coarse crumbs.

Arrange the salad in the shape of a dragon on a flat plate.
