Pasta and mushroom salad
Description
A simple dish to prepare. This easy-to-make, yet filling and nutritious pasta and mushroom salad is a great alternative for lunch or dinner. I often take this salad to work in a container—it keeps well and doesn't lose its flavor. And the taste, I must say, is really good, especially if you don't skimp on quality cheese. So, here's the recipe for pasta and mushroom salad: 1. Cook the pasta until fully done. Drain the water and let the pasta cool. 2. Slice the mushrooms and sauté them in olive oil until cooked through. 3. Peel the red onion and finely chop it. 4. In a salad bowl, combine the cooked pasta, sautéed mushrooms, and red onion. Sprinkle with grated cheese and fresh herbs. Season with salt and pepper, then drizzle with olive oil. That's it—the pasta and mushroom salad is ready. I recommend letting it sit for at least 15–20 minutes before serving. Serve chilled.
