
Quinoa salad with chickpeas and tomatoes

Minimum effort — excellent result. This salad with quinoa, chickpeas, cherry tomatoes, honey, and mint is perfect for those who care about their health and figure. Quinoa contains a huge amount of protein, much more than other cereal crops. The amino acid composition of quinoa protein is similar to that of milk proteins. No wonder Native Americans called quinoa "the golden grain." This wonderful salad can be served either cold or slightly warm. It can be served immediately.

1. Rinse quinoa thoroughly using a fine mesh strainer, place it in a medium-sized saucepan, and add the required amount of water. Bring to a boil over high heat, then cover, reduce heat to the lowest setting, and simmer until the quinoa has absorbed all the water, about 20 minutes. Remove the saucepan from heat and fluff the quinoa with a fork. Let it cool.

2. Chop the mint. Coarsely slice the olives. Cut the cherry tomatoes. Place amaranth, olives, and tomatoes in a bowl, then mix.

3. Add the chopped mint, mix and set aside.

4. Squeeze lemon juice into a small bowl. Add wine vinegar and honey, season with salt and pepper to taste.
