
Sauerkraut salad
Description
Potatoes with fresh cabbage are delicious in any form: stewed or baked, in a pie or salad. Sauerkraut also pairs wonderfully with potatoes. To make a sauerkraut salad, you'll need three large potatoes (or four medium ones). Mushrooms are optional, but the salad turns out much more interesting with oyster mushrooms.

Boil the potatoes in their skins. Peel and cut into large cubes.

Rinse the sauerkraut (mine was very salty, so I washed it, but this is not necessary), squeeze out the excess liquid, and chop it with a knife to make it easier to eat.

Place the potatoes in a bowl, add mushrooms (in our case — oyster mushrooms).

Then add the cabbage.

Chop the onion into small cubes and add to the salad.

Season with pepper, add vegetable oil and vinegar.

Add the chopped herbs.

Mix everything well. You can eat it right away or let the salad chill in the refrigerator for about 20 minutes first. Serve the finished sauerkraut salad with black bread.
