
Couscous salad
Description
You can prepare this salad with any dried fruits, fresh fruits, and berries. Be sure to add nuts and dried mint if you don't have fresh one. Couscous is usually soaked with boiling water in a 1:1.5 ratio, but I recommend using equal amounts. It's always easier to add a little more later than to take some away.

Prepare the ingredients.

Pour the couscous into a deep ceramic bowl, add a pinch of salt and a spoonful of olive oil. Pour an equal amount of boiling water over the couscous, stir, and cover with a lid for 5 minutes.

Remove the lid and fluff the couscous well with a fork. Let it cool.

Cut the apple into small cubes with the peel and sprinkle with lemon juice. Rinse the raisins, pour boiling water over them, and dry on a paper towel.

Place the apples and raisins into the bowl with the couscous and mix.

Toast the almonds in a cast-iron skillet. Let cool and roughly chop.

Add finely chopped mint and pomegranate seeds to the salad.

Drizzle the salad with honey and squeeze lemon juice over it. Mix well.

Arrange in individual salad bowls, sprinkle with almonds and pomegranate seeds.

Garnish with mint sprigs and serve.
