
Salad with chicken offal
Description
The recipe won't take much time. You can prepare the salad using several types of offal or just one—either way, it will be very tasty! If you don't have salad onions, use white onions. It's best to slice them and pour boiling water over them before marinating to remove excess bitterness. I'll explain in detail. Serve at the table.

Prepare all the necessary ingredients.

Rinse the offal thoroughly. I don't cut them into pieces or remove excess membranes or fat right away. First, I boil them, and when slicing for the salad, I remove all that later. Cover the offal with water, add carrot, one unpeeled garlic clove, bay leaf, peppercorns, and season with salt to taste. Simmer for 40–45 minutes over medium heat after boiling.

Prepare marinated onion. Slice the onion into half-rings. The more onion, the tastier it will be! Add sugar, 0.5 tsp salt, and vinegar to the onion. Mix thoroughly and let it sit for 12–15 minutes. Then drain excess liquid through a sieve. The onion is ready!

When the giblets are cooked, remove them from the broth, let them cool slightly, and chop them not too finely. Remove any excess.

Add the pickled onion.

Dress the salad with mayonnaise, season with pepper to taste, and let it sit for 15-20 minutes to marinate!
