
Salad with chicken gizzards
Description
The recipe won't take much time. You can buy pre-cleaned chicken offal at the store. However, don't be lazy—thoroughly rinse and inspect the product. Even a tiny spot of bile can spoil an entire salad. Be careful when serving.

Prepare the necessary ingredients.

Rinse the gizzards, cover with cold water so it's about an inch above the gizzards, and bring to a boil. Simmer for a couple of minutes, then drain in a colander. Rinse the gizzards once more, cover with fresh water, and cook until tender, adding salt to taste during cooking. Cool the cooked gizzards and slice them into strips.

Slice the onion into thin strips, chop the garlic coarsely.

Grate the carrot on a Korean grater.

Heat the oil in a large skillet or wok. Add the sliced gizzards and sauté, stirring, until golden brown.

Add the onion, garlic, sugar, and spice. Fry for a couple of minutes, stirring.

Add the carrots, stir to coat them with oil, and heat for a couple more minutes.

Pour in the soy sauce, add pepper, and mix well. Remove from heat and pour in the apple cider vinegar. Mix again, and if necessary, add salt to taste. Leave under a light weight until completely cooled. For best flavor, let the salad marinate in the refrigerator for a couple of hours.
