
Salad with chicken liver
Description
The recipe won't take much time. Traditionally, we prepare liver salads to be heavy and filling, dressing them with mayonnaise. Yet chicken liver is tender and pairs wonderfully with herbs, fresh vegetables, and fruits. I'll tell you how. Serve at the table.

Clean and rinse the liver. Peel the mango and cut it into cubes.

Wash and dry the lettuce leaves. If you have iceberg lettuce, tear the leaves into pieces.

Mix the flour with salt and pepper, and coat the pieces of liver in it.

Heat butter and vegetable oil in a frying pan over medium heat.

Place the liver into the heated oil. Cover the pan with a lid and fry for about 3 minutes.

Flip and cook under the lid for another 2-3 minutes. If you prefer your liver more well-done, you can cook it a bit longer.

Place the liver on a paper towel to absorb excess fat.

Mix vegetable oil, mustard, sugar, lemon juice, ground pepper, and a couple of tablespoons of water. It's very convenient to do this in a jar with a tightly sealing lid.

Pour the dressing over the salad leaves, mix.

Cut the liver into smaller pieces.

And assemble the salad. Arrange the greens, liver, and mango on plates. Drizzle a little more sauce on top and sprinkle with pepper.
