
Salad with chicken breast, vegetables, and feta cheese
Description

Marinate the chicken meat in advance in olive oil, lemon juice, garlic, and herbs to give it a pleasant aroma and flavor, then slice it thickly and arrange on a plate with vegetables. Cut the vegetables as you would for a "Greek" salad. You can fry the chicken in a pan or bake it in the oven—just don't overcook and dry it out. Garnish optionally and serve.

1. Mix lemon juice (reserve 2 tablespoons for the salad), 0.5 tablespoon olive oil, 3 minced garlic cloves, 2 tablespoons chopped herbs, salt, and pepper. Marinate the meat for 20 minutes, then sear on a hot skillet for 2-3 minutes per side. Transfer the meat to a plate, cover with foil, and let rest for another 5 minutes.

2. Dice the cucumber, tomatoes, and cheese. Mix with lemon juice, remaining oil, honey, mustard, herbs, salt, and pepper.
