This recipe won't take much time. At our home, it's become a habit to always have boiled chicken ready in the fridge. And we almost always have vegetables on hand—or at least we try to. So whenever I'm really hungry but don't feel like cooking, I always make salads like this one. Why not? Just 10 minutes of work, and you've got a nutritious and delicious salad. My recipe for chicken, pepper, and tomato salad is extremely simple: 1. Boil the chicken fillet until fully cooked (I drop it into boiling salted water and simmer for 20 minutes), then let it cool and cut into small cubes or shred into strips—whichever you prefer. 2. While the chicken is cooling, prepare the vegetables: dice the peppers and tomatoes into small cubes. You can also add any other vegetables you have on hand, if you'd like. Feel free to get creative. 3. That's it for prep work. Now simply place the chicken, peppers, and tomatoes into a salad bowl. Add grated cheese (optional), season with salt and pepper, and add your dressing. The choice of dressing is up to you. Mayonnaise works well, though it makes the salad rich and somewhat unhealthy (especially if it's store-bought). You could use yogurt or sour cream instead, though that's a matter of personal taste. Olive oil is another great option. In short, use whatever dressing you like. After mixing, let the salad sit for at least 5–10 minutes before serving.
