Chicken, omelette, and Korean carrot salad

20 min4 serv.20 февр. 2026 г.

Description

Minimum effort — excellent result. I suggest this simple-to-prepare, yet no less delicious salad. It will especially appeal to those who prefer hearty and savory options. The egg strips from omelet pancakes and chicken absorb the juice and aroma of Korean-style carrots, while the mayonnaise ties everything together. Altogether, it's a perfect balance of taste and flavor. Ready to serve immediately.

Instructions

  1. 1

    Step 1

    Step 1

Prepare all the necessary ingredients for making the chicken, omelet, and Korean-style carrot salad. Peel and wash the carrots. Wash the eggs and dry them.

  2. 2

    Step 2

    Step 2

Rinse the chicken fillet and place it in a saucepan. Pour water over it, add salt, and bring to a boil. Simmer the chicken over low heat, skimming off the foam, for 25-30 minutes, until cooked through. Remove the chicken and let it cool completely. If desired, you can add bay leaf and black peppercorns while cooking.

  3. 3

    Step 3

    Step 3

Prepare Korean-style carrots. For this, grate the carrots on a special mandoline or cut them into thin strips with a knife. Add salt, sugar, vinegar, and lightly squeeze the carrots so they release their juice and become tender. Place the spices in a pile in the center on top of the carrots. Pour vegetable oil into a small saucepan, add black and hot pepper, and heat over low heat until a light smoke appears. Pour the hot oil over the spices and mix well. Add minced garlic, stir, and refrigerate for at least one hour to allow the carrots to marinate.

    Step 4

    Step 4

While the chicken is cooking and the carrots are steeping, prepare the omelet pancakes. To do this, crack one egg into a bowl and whisk until smooth.

  5. 5

    Step 5

    Step 5

Grease a frying pan with vegetable oil and heat over medium heat. Pour the egg onto the pan, spread it over the surface, and fry for about one minute on each side. Transfer the omelet to a plate and prepare the remaining eggs in the same way. Let the omelets cool, cut them into strips, then into medium-sized matchsticks. Place the omelet into a salad bowl.

  6. 6

    Step 6

    Step 6

Add Korean carrot without liquid to the salad bowl.

  7. 7

    Step 7

    Step 7

Cut the cooled chicken breast into medium julienne strips and add to the omelet and carrots.

  8. 8

    Step 8

    Step 8

Mix the salad and dress with mayonnaise.

    Step 9

    Step 9

The salad with chicken, omelet, and Korean carrot is ready.
