
Beet and Chicken Salad
Description
The recipe won't take much time. You can also add a little garlic instead of onion to the salad, which will give it extra flavor. Serve at the table.

To prepare a chicken and beet salad, we will need, of course, chicken—more precisely, smoked chicken breast, which should be cut into cubes.

To the chicken in a bowl, add grated boiled beetroot. Note that the volume of beetroot should be approximately 1.5 times more than that of the chicken.

The salad was designed with beans, so we open a can of beans, drain the water, but leave a little—just a little—to keep the salad juicy. Then add the beans to the chicken and beets.

Finely chop the onion and sauté in vegetable oil. When frying onions, I always add a pinch of sugar. It gives the onions a golden color, and in the finished dish, it acts as a flavor enhancer. Peel the boiled eggs and chop them. Add the cooled onion and eggs to the salad.

Add mayonnaise and mix. Mayonnaise can be substituted with a sour cream-based dressing (whip 1 cup of ryazhenka, 1 teaspoon of lemon juice, mustard and salt to taste) or any other dressing of your choice. That's it—transfer to a salad bowl or plates and taste.
