
Chicken and Orange Salad

Minimum effort — excellent result. I want to share with you a recipe for a so-called warm salad, which is very easy to prepare. You can serve it either as a standalone dish or with a side of rice or boiled potatoes. Plus, it's low in calories—the chicken meat isn't fatty. To make this chicken and orange salad, you'll need fresh herbs, especially spinach: combined with garlic, it will add extra zest to the salad. It's ready to serve immediately.

Before starting preparation, thoroughly wash the spinach and parsley. Wash the orange using a soapy solution. Peel the garlic clove.

Finely chop the parsley. Finely chop the garlic clove as well. Remove the seeds from the chili pepper and finely chop it too.

Place all the freshly chopped ingredients into a mixing glass and pour olive oil over them.

Using an immersion blender, blend these ingredients until a smooth mixture is obtained.

Cut the chicken fillet into small pieces.

Place all the fillet pieces into a bowl and pour the contents of the glass on top. Mix well, then refrigerate for 1 hour to marinate.

Then transfer the marinated chicken pieces to a frying pan and fry over medium heat in olive oil (from the marinade), stirring with a spatula, until a light golden crust forms on all sides.

Transfer the fried chicken pieces to a colander to remove excess oil.

Remove the peel from the orange and cut the flesh into small pieces.

Now assemble the salad: place spinach leaves on a flat plate, add the chicken pieces on top, then arrange the orange slices over the chicken. Season with salt, taste, and add more black pepper if needed. Serve the salad immediately.
