
Chicken and pineapple salad

Perfect for everyday meals. The chicken and pineapple salad recipe I'm sharing with you differs slightly from the versions we're used to, but it's still incredibly delicious. We'll serve this salad warm. In addition to the main ingredients, we'll add couscous (cooked in orange juice) and peas—very unusual, yet quite successful combination. You can easily prepare this chicken and pineapple salad at home for lunch or dinner. By the way, it would also look great on a festive table. Garnish as desired and serve.

First, you need to prepare the couscous. Cook it according to the instructions on the package, but use orange juice instead of water. I took 2/3 cup of juice and added water to it.

Cut the chicken fillet into small pieces, sprinkle the meat with ground pepper, basil, and parsley, add salt to taste, and mix well. Place the fillet pieces into heated olive oil and fry until golden brown.

We also cut the pineapple into small pieces and place them on a preheated pan. Use as little oil as possible for frying the pineapple (or don't add any at all if you're using a non-stick pan). Cook the pineapple, stirring, until brown spots appear. Meanwhile, boil the peas until fully cooked.

When all the ingredients are ready, we combine the warm chicken, couscous, peas, and pineapple in a bowl, and add spices to taste.
