
Shrimp and zucchini salad

Prepare all the ingredients. I used pre-cooked and frozen shrimp.

Thaw and peel the shrimp.

Add lemon zest and juice, salt and spices to taste.

Mix and set aside for now.

Slice the zucchini into rounds, then cut each round into 2 or 4 pieces, depending on the size.

Heat 1 tablespoon of oil in a skillet, add the zucchini and sauté until just slightly crisp, for about 3-5 minutes. Then transfer to a plate.

Add more oil to the same skillet and add sliced garlic. Sauté until the garlic infuses the oil with its aroma, then remove it. In the garlic-infused oil, sauté the shrimp for just a couple of minutes until they turn golden brown.

Combine shrimp and zucchini. Add chopped fresh herbs and soy sauce to taste. Mix well.
