Salad with Korean-style carrots and croutons
Description
A simple dish to prepare. Make the salad right before serving to keep the croutons crispy, although it's still tasty a few hours later—the softened croutons have their own appeal. While the eggs are boiling, I usually have enough time to chop the sausage, add the carrots, croutons, and mayonnaise. Salt and pepper are optional; if the carrots are well-seasoned, you might not need to add any. Serve chilled.
