
Quinoa salad with chicken and oranges
Description
This salad is perfect for a light dinner and will be warmly welcomed at a festive table. You can substitute iceberg lettuce with spinach, arugula, or any other lettuce of your choice. The chicken breast can be not only boiled but also baked in the oven, and the honey can be replaced with maple or date syrup.

Prepare all the necessary ingredients for the quinoa, chicken, and orange salad. Wash the orange thoroughly in hot water, rinse the iceberg lettuce and dry it.

Rinse the quinoa and cover with cold water. Place the pot with quinoa over low heat and cook for 15-20 minutes after boiling. The quinoa should be cooked and all the water absorbed. Remove the pot from the heat and let it cool completely.

Cut or tear the iceberg lettuce into pieces and place in a salad bowl. Slice the red onion and add to the iceberg lettuce.
