
Salad with squid and pineapple
Description
I was won over by the simplicity of preparing this dish, and the ingredients aren't too hard to find in modern supermarkets. The salad pairs perfectly with vegetable side dishes, such as green beans or boiled potatoes. It is served cold, dressed with sauce and generously garnished with fresh herbs. You can use either canned or fresh pineapples.

1. I have squid in vacuum packaging, they are chilled and already cleaned; cut them into strips, then pour boiling water over them for 1 minute, then dry with paper towels.

2. In another bowl, mix sweet chili sauce, fish sauce, lime juice, and grated ginger, add salt, pepper, and stir well.

3. Wash the cilantro and arugula and place on a paper towel to dry. Peel the pineapple rings and cut into pieces.

4. Season the squid with salt and pepper, place them on a pan heated with peanut oil, add pineapple, and sauté for 2 minutes. Mix the squid with pineapple, herbs, and thin strips of red pepper, then drizzle with sauce and toss well.
