
Zucchini and chicken salad
Description
The salad is quick and easy to prepare. In fact, I make this zucchini and chicken salad quite often at home during vegetable season. It's very healthy, even diet-friendly! However, some people might find it a bit bland. So, if the calorie count isn't a concern for you, feel free to enrich it—add some smoked sausages, for example, and use sour cream or mayonnaise instead of lemon juice. Good luck! 1. Cut the zucchini, trim off the skin if necessary, and remove the seeds. Mix the oil and lemon juice, then marinate the zucchini in this mixture for 10–15 minutes.

2. Tear the spinach and mint by hand and place them at the bottom of a salad bowl. Slice the onion into thin half-rings, cut the chicken into cubes, and finely chop the nuts and cheese as finely as possible.

3. At the very end, add the prepared zucchini with the remaining marinade, mix well—and it's ready to serve!
