
Turkey Gizzard Salad
Description
Perfect for an everyday table. You can also make this salad with chicken gizzards—it will be delicious too. Turkey gizzards are just larger and meatier. You can substitute the pickled cucumber with a regular salted one. As for the mayonnaise, I wouldn't replace it with sour cream; it fits perfectly here. If you don't like store-bought mayonnaise, make your own homemade version. Garnish as desired and serve.

Wash the turkey gizzards, remove any yellow membranes if present, and cut each gizzard in half.

Place the sliced gizzards in a pot and cover with water.

Cover the pot with a lid and cook the gizzards until tender for 60-70 minutes.

Peel the carrots and cut them into strips. Place them in a frying pan.

Peel the onion, wash it, and chop. Add to the carrots.

Pour in sunflower oil and simmer the carrots with the onion for 15 minutes, stirring.

Chop one large pickled cucumber finely and place it in a salad bowl.

Boil the eggs hard, cool and peel them. Finely chop and add to the salad.
