
Salad with fried chanterelles

Meanwhile, residents of Belarus, the Baltics, Ukraine, and some regions of Russia can afford to eat chanterelles by the kilogram—they're easy to find in the forest or, at worst, buy. Serve chilled.

Divide the garlic into several parts.

Then pour a little oil into a skillet and sauté garlic and cleaned, dried (uncut) chanterelles in it. Season with salt and pepper, stirring constantly. Then remove from heat.

Wash the arugula, dry it. Then season with salt and pepper, add olive oil, and mix well.

Place arugula on a plate. Add chanterelles on top (discard the garlic).
