
Salad with fried potatoes
Description
No wonder the Slavs quickly dubbed potatoes the "second bread" – our ancestors grew so fond of them. But potatoes aren't loved only by us. Try this original Canadian salad, which also features fried potatoes.

1. Peel the potatoes, wash them, and cut into 2-3 cm cubes. Rinse the potato cubes under cold water to remove excess starch and achieve crispy pieces.

2. Place the potatoes on a large skillet. Pour in cold water until it just covers the potatoes, and add a pinch of salt.

3. On high heat, quickly bring the potatoes to a boil. Then reduce the heat and simmer for another 3 minutes. Remove from heat, drain all the water, and let the potatoes cool down.

4. Place the potato pieces on a baking sheet, drizzle with oil, and season with salt. Roast in the oven for 20–30 minutes at 220°C until golden and crispy. Flip the potatoes once during roasting. Taste the cooked potatoes for salt and add more if needed.

5. In a small bowl, mix all the dressing ingredients.

6. Transfer the cooled cooked potatoes to a large attractive dish, mix with corn, pepper, garlic, parsley, and dressing. Chill before serving!
