
Herring caviar salad
Description
Minimum effort — excellent result. Herring roe contains no fewer vitamins than the fish itself. Very often, it remains after feasts, since it's not customary to serve it at festive tables. To prevent waste, make a delicious salad using the roe (or adding it in), which everyone knows better as "Herring under a Fur Coat." It's prepared on the same principle, only the roe becomes a main ingredient (alongside the fish itself). Can be served immediately.

1. This salad is prepared in the same way as the well-known "Herring under a Fur Coat" salad, but based on or with the addition of fish roe. Very often, after filleting fish, roe or milt remains (which can also be added to the salad). For example, I buy herring specifically for the roe, so I would make the salad using only the roe as the base. Chop the roe (if making a large dish, you can also add the fish meat, but remove the bones). Sprinkle chopped onion—either regular or green—on top.

2. Boil and cool the vegetables (potato, carrot, and beet) and eggs in advance.

3. Peel the vegetables and eggs and grate them on a medium grater in the following sequence:

4. Potatoes, carrots, eggs, and beets. Each layer should be generously coated with mayonnaise.

5. The carrots can be "diluted" across several layers. For example, place them between the potatoes and beets — this way, the salad will look attractive when served in portions.

6. The final layer is always beet. You can sprinkle the top with yolk to make it look more attractive. Many people prepare this salad without eggs, it's up to your taste. In our family, we personally prefer "shubka" made exactly by this recipe.

7. Put the salad in the refrigerator for at least 3 hours to let it marinate well. Tip: the layer after the potatoes should be generously coated with mayonnaise, as it absorbs a lot of sauce. This way, the salad won't turn out dry.
