
Salad with beef tongue and chicken
Description
The recipe won't take much time. If you've boiled the beef tongue in advance, preparing the salad will take you very little time. Besides, it will be easy to slice neatly. You can substitute fresh cucumber with marinated gherkins, and use a mayonnaise sauce made of equal parts sour cream and mayonnaise. For extra spice, add a bit of garlic or hot pepper. Serve at the table.

Prepare all the necessary ingredients for making the salad with beef tongue and chicken. Cut off the stem and remove the seeds from the bell pepper. Wash and dry the vegetables, green onions, and herbs.

Boil and cool the beef tongue in advance. To do this, wash the tongue thoroughly and place it in a heavy-bottomed pot. Cover with cold water and set over medium heat. Bring to a boil, cook for 15–20 minutes, then drain the broth. Rinse the tongue, transfer it to a clean pot, and cover again with cold water. Add a peeled onion, allspice and black peppercorns, and place over medium heat. Bring to a boil once more, then reduce the heat slightly and simmer, skimming off the foam, for 3–3.5 hours. The tongue should become tender and easily pierced with the tip of a knife. Remove it from the broth and place it in cold water, then peel off the outer layer. Allow the boiled tongue to cool completely.

While the tongue is boiling, cook the chicken. To do this, rinse the meat and place it in a saucepan, cover with cold water, add salt, and bring to a boil over medium heat. Skim off the foam that forms during boiling, then simmer for 20–30 minutes, until cooked through. Remove the saucepan from the heat and let the chicken cool, placing it in a bag.

Slice the boiled beef tongue into strips and place in a salad bowl.

Separate the napa cabbage into leaves, cut off the stem ends, and slice each leaf lengthwise into 2-3 strips. Cut the cabbage into thin strips and add to the tongue.

Cut the bell pepper and fresh cucumber into julienne strips and place in a salad bowl.

Finely chop the herbs and green onion and add to the salad.

Cut the chicken (I used fillet) into thin strips and add it to the salad bowl.

Season the salad, mix and dress with mayonnaise. Portion out the salad and serve.
