Fennel and Orange Salad

Description

In a large bowl, whisk together vinegar and oil, then season with salt and pepper. Using a sharp knife, cut off both ends of each orange. Remove the peel and white pith. Slice the oranges thinly. You can leave a few slices with peel for garnish. Place the orange slices together with the released juice into the bowl with the dressing. Add fennel and, if desired, chopped fennel fronds. Toss gently and serve. Garnish the salad with walnuts.
