
Salad with pancakes and corn
Description
The recipe won't take much time. Of course, the salad is quite caloric—after all, it has fried eggs and mayonnaise. That's why I prefer to boil or bake the chicken instead of frying it, as suggested in the original recipe for the salad with pancakes and corn. And honestly, I usually mix the mayonnaise 1:1 with plain yogurt—it turns out both tastier and healthier. Once ready, serve it at the table.

Boil or bake the chicken breast until cooked. Cut into small pieces.

Peel the onion and chop it finely with a knife.

Mix the eggs with milk, starch, and salt. On a medium-sized frying pan, cook several thin pancakes.

Cool and cut into strips of any desired width (you can make them very thin, like noodles, or thicker, as shown in the photo).

Open the corn, drain the liquid.

Wash dill greens, dry and finely chop.

Combine all ingredients in a salad bowl, season with salt and pepper, add dressing, mix well. Chill in the refrigerator and serve.
