
White Bean Salad
Description
If you have a can of canned white beans in their own juice in the fridge, you can prepare this salad in just a few minutes. As you can see, the ingredients are minimal—beans, tomatoes, some fresh herbs (whatever you have on hand), lemon juice, and oil. Yet the dish has a wonderful flavor—no wonder tomatoes and beans are so often paired in various recipes; they make a perfect combination. Thanks to the protein-rich beans, this salad is quite filling—easily replacing a bowl of soup or borscht—yet it's light, non-greasy, and, thanks to the herbs, wonderfully fresh.

Step 1

Open the can of beans and pour into a colander to drain the liquid.

Wash the tomatoes, dry them, and cut into small cubes.

Place in a deep bowl, add the beans.

Wash, dry, and finely chop the herbs.

Add to the salad.
