
Salad with bacon, pear, and arugula
Description
For the salad, use pears with firm flesh, as they hold their shape well when fried. You can use any type of bacon: boiled-smoked, dry-cured, or air-dried. Arugula can be used either on its own or mixed with other salad greens.

Prepare the ingredients.

Wash the pear, dry it, remove the core, slice it thinly, and place it in a frying pan together with the bacon. If the bacon has very little fat, add a little oil. Fry the bacon and pear until golden brown on both sides.

Transfer the arugula to a colander, rinse it, and dry with paper towels. It will be even better if the arugula is mixed with other types of salad.

Transfer the arugula to a bowl with high sides.

Arrange the slices of fried bacon.

Place the pear slices on the salad.

Lightly drizzle the salad with oil and vinegar, then generously sprinkle with grated Parmesan. I don't add salt, as the Parmesan and bacon are salty enough.
