
Artichoke Salad
Description
Artichoke salad is served as a separate dish. Leek can be substituted with regular onion if desired, and pine nuts can be replaced with walnuts. Parmesan is the most suitable cheese for this dish, but it can easily be substituted with any other hard cheese you prefer.

Step 1

1. Wash the artichokes and boil them in salted water (15 minutes) together with peeled potatoes (it's best if the potatoes are small and roughly the same size).

2. Place the peeled garlic, washed and chopped basil (let the water drain off), and pine nuts into the blender bowl along with the olive oil. Add the cheese cut into small slices and salt to taste, then blend until smooth.

3. Remove the scales from boiled artichokes and cut them into wedges. Sauté them in olive oil for 2 minutes. Then add 1 teaspoon of the blended sauce and continue cooking over medium heat for 2-3 minutes.

4. Tear the salad mix into small pieces by hand and place it in a deep bowl. Thinly slice the leek (white part) diagonally and separate the green onion into strands.

5. On a portioned plate, first place the salad, then arrange the potatoes and artichokes around it, and sprinkle with onion feathers and leek rings on top.

6. Pour the sauce over the artichoke salad, and drizzle with unrefined olive oil to taste.
