
Mushroom salad
Description
A simple dish to prepare. Even in beloved folk tales, Russian beauties had rich imaginations! They would devise various trials for their suitors or sew and embroider with magical threads. I'm sure they excelled in cooking too, but the tales remain silent about it. Probably because for a Russian beauty, cooking well is a natural talent. When I was preparing the "Russian Beauty" salad with mushrooms, I immediately pictured a cozy little hut and a warm stove. And why just chop and mix ingredients? Something special had to be invented to surprise everyone. So I came up with the idea to bake the "Russian Beauty" salad in mushroom caps. It turned out amazingly! Do give it a try. You can present the salad however you like—garnish it with herbs, cheese, or fresh vegetables. Serve it chilled.

Wash and thoroughly clean the mushrooms. Separate the stems from the caps.

Finely chop the chicken fillet, or better yet, pass it through a meat grinder. Finely chop the onion and green onion, and also finely slice the carrot. Pour vegetable oil into a frying pan, heat it up, then add the chicken fillet, onion, green onion, and carrot. Simmer until the chicken is fully cooked.

Boil the mushroom stems in a small pot with salted water.

Finely chop the boiled mushroom stems or pass them through a meat grinder as well. Add to the chicken and vegetable filling. Mix well.

Season the filling with salt and pepper to taste. Use a tablespoon to fill the mushroom caps. If the mushroom caps are not hollow enough, scrape out more flesh with a teaspoon. Arrange the filled mushroom caps in a baking dish.

Bake the "Russian Beauty" mushroom salad in a preheated oven at 200 degrees for 30 minutes.

The salad will develop an appetizing crispy crust, and the mushroom caps will absorb the vegetable juices. A very tasty and original "Russian Beauty" salad with mushrooms.
