
Chinese-style salad
Description
The recipe won't take much time. Harbin salad can be ordered at a restaurant or café, bought at a store, or prepared at home. It can be supplemented with boiled beef or chicken, which should be shredded into fibers or cut into thin strips before adding to the salad. The salad will beautifully enhance a festive table with bright colors and diversify classic dishes. Serve at the table.

Prepare all the necessary ingredients for making the salad.

Place the cellophane noodles (rice noodles) into a suitable container, pour boiling water over them, and let sit for 10 minutes.

Prepare the sauce. Combine the oils, soy sauce, and lemon juice.

After the time has elapsed, drain the noodles in a colander to remove all the liquid. Place them in a large salad bowl, pour in the sauce, and mix well.

Fry the egg pancakes one by one: beat the egg with a fork until smooth. Season the mixture with salt. Pour it into a skillet with a small amount of oil and cook for 1.5 minutes on one side and 30 seconds on the other. Transfer the pancakes to a plate.

Cut the Chinese cabbage (only the top part) into thin, long strips. Peel the carrot and cut it into matchsticks, and cut the cucumber into matchsticks as well. Add the vegetables to the rice noodles.

Cut the egg pancakes into 2-4 pieces, then slice into strips. Add to the salad bowl. Gently mix all ingredients, and if necessary, season with salt and pepper to taste.
