Description
Keep in mind that eggplant cubes will stop being crispy in the salad after a short time as they soak up the dressing, so it's better not to prepare the salad in advance, but only as much as you need for your current meal. If desired, walnuts can be replaced with an equal amount of other nuts, but I personally prefer this salad with walnuts. It's best to taste and add salt according to your preference, rather than relying strictly on the amount specified in the ingredients.

Place all the ingredients on the table. Wash the eggplants and sweet peppers. Peel the onion and garlic, remove the seeds from the bell peppers, and wash them once again. Put the chicken fillet into a saucepan with water and set to boil over low heat until cooked.

Cut the eggplants into small cubes.

Place the starch, salt, and eggplant cubes into a food-grade polyethylene bag. Shake the bag vigorously, securely holding the edges. The starch mixture should completely coat each eggplant cube.

Heat vegetable oil in a skillet and add all the eggplant cubes coated in starch. Fry the eggplants until they develop a golden crust. Frying in starch helps the eggplant cubes achieve a crispy crust.
