
Herring under a fur coat salad
Description
For Olivier salad, I use milk sausage; many people replace it with chicken or ham—do as you prefer. If the salad is intended only for adults, you can substitute the sausage with smoked meat, which will add a pleasant piquancy. The remaining ingredients are constant for me. Let's get started.

Step 1

Prepare the ingredients for the salad: boil the potatoes and eggs in advance, then peel and cool them. Drain the liquid from the peas and prepare homemade mayonnaise. Now you can start assembling the salad. My potatoes are very small, so I took an extra one, just to be safe.

Take small bowls, salad cups, or ramekins for serving the salad. Place the coarsely grated potatoes on the bottom and drizzle with a mayonnaise lattice. Use salt and ground pepper to taste. I don't add salt, as I use a sufficiently salty mayonnaise.

Grate the sausage on a grater. If using meat, chop it as finely as possible, spread it out, and drizzle with mayonnaise.

Separate the eggs into yolks and whites. I set aside some of the whites to decorate the salad, cutting out little flowers with a sharp knife. Grate the remaining whites and spread them over the salad. Set the yolks aside for now.

Next layer — canned cucumbers and a mayonnaise drizzle.

Make the salad fluffy by covering it with grated yolks. Create a thin mayonnaise lattice.
