
New Year's beet salad
Description
The recipe won't take much time. This salad recipe is quite simple and therefore leaves plenty of room for your imagination. For example, instead of sunflower seeds, you can use sesame seeds or nuts. You can also add grated cheese and try a different dressing variation, such as a mayonnaise-sour cream dressing. This will make the salad more substantial and filling. Serve at the table.

Peel the carrots, rinse under running water, and dry with a clean towel. Grate using a grater. I use a Benriner grater, which produces pieces similar to those in "Korean-style carrots." However, you can also use a regular coarse grater.

I prefer to eat beetroot raw, as it retains more of its beneficial properties and vitamins this way. Grate the beetroot the same way as you would carrots: using a Börner grater or a coarse grater.

Peel the apple and remove the core. Grate it on a Benriner grater or a coarse grater. For those who don't like the combination of sweet-sour apples with beets, this step can be skipped. In my opinion, the apple adds freshness to the dish. You may choose not to use it.

The seeds should be cleaned and lightly toasted in a dry skillet. Then wait for them to cool down. Alternatively, you can buy pre-peeled and roasted seeds, which will save preparation time.

Peel the pomegranate and remove the seeds. Add the cooled seeds and pomegranate seeds to the salad.

Prepare the salad dressing. Mix lemon juice with olive oil and salt. Thoroughly combine the mixture and add it to the salad. Your beet salad is ready!
