Description
A simple dish to prepare. This recipe for the "New Year's Ornaments" salad reminds me suspiciously of our beloved classic Olivier salad—after all, it has peas and potatoes too. Yet, the taste is quite different, as the cucumber and lemon juice add new, fresh notes to the salad. So try treating your guests to these "little balls" this year—they'll appreciate it. Serve chilled.

1. Boil the potatoes and let them cool. In a separate pot, boil and cool the carrots. Drain the vegetables to remove excess liquid, if necessary. The less liquid in the salad, the better. Mash the potatoes into a puree, adding salt and paprika.

2. Cut the cucumber into small squares, then add it to the puree along with the peas, corn, and boiled carrots. Add the wet ingredients gradually so you can control the thickness.

3. Mix well and check whether you can shape this mixture into balls. Usually at this stage, I add a bit more mayonnaise and sour cream, along with some juice and mustard to taste. This is the consistency you should get.

4. Shape the mixture into balls, roll half of them in chopped herbs, and decorate the others with chopped pineapple. Add some olives—and it's ready!
