1. Peel and wash the onion, cut half into half-rings, place in a bowl and pour over with boiling water for 5 minutes. After that, transfer the onion to a colander to drain excess moisture.

2. Peel the garlic cloves and place them in a mortar, add salt, then top with walnuts (you can pre-toast them in a pan). Grind in the mortar until smooth and homogeneous.
