
New Year's Salad

You can use any layered salad containing carrots as a base—just make the carrot layer the top one. This original, delicious, and beautifully presented salad will look wonderful on your festive table. Prepare all the ingredients. You can use any canned fish; I will be cooking with tuna. Choose tuna in oil or in its own juice. Boil the potatoes, carrots, and eggs in advance. Let them cool.

Then peel the eggs, and peel the potatoes and carrots. Drain the liquid from the tuna and mash the fish with a fork.

To assemble the salad, choose a long dish. Grate the potatoes on a coarse grater and place them as the first layer, shaping them into the form of a carrot. I also made small edges along the sides to make it easier to place the fish. Spread mayonnaise over the potatoes and season with salt to taste.

Spread the tuna over the potatoes. The potato edges act as a barrier, preventing the oil from draining off the tuna and instead allowing it to soak into the salad from within.

Next, place the grated eggs as a layer, forming a small mound along the length of the carrots. Season this layer with salt to taste.

Then coat the salad evenly with mayonnaise on all sides, smoothing the edges.

As the final layer, spread the grated carrot, covering the salad on all sides and gently pressing it down with your hands. Insert the carrot greens, which can be substituted with parsley or any other fresh herbs. Decorate the carrot with thin strips of olives.
