Mimosa salad with little mice
Description
The salad is quick and easy to prepare. There are many recipes for "Mimosa" salad, as it was invented during a time of food shortages, and every housewife made it her own way. This version is interesting due to its original decoration and slightly lower calorie content compared to the same salad made with cheese and butter. This salad is for adults, but the cheerful decoration will, even if just for a moment, bring you back to your childhood. I hope you will enjoy this recipe, which is thoroughly described and illustrated. The salad is ready to serve.
Instructions
- 1
Step 1

We will boil the required vegetables and eggs in advance. Then we will cool them and peel them.
- 2
Step 2

Grate the potatoes on a medium or fine grater.
- 3
Step 3

We do the same with the carrot.
- 4
Step 4

Separate the egg whites from the yolks, and grate each of them separately on a grater.
- 5
Step 5

The egg whites will go into the salad as a separate layer, while the yolks will be needed to decorate the salad.
- 6
Step 6

Try to chop the onion as finely as possible. Sprinkle it with vinegar or lemon juice to remove the bitterness, and let it sit for a while.
- 7
Step 7

Drain the juice from the canned fish and mash the fish. Spread it as the first layer.
- 8
Step 8

Evenly place the onion over the fish and lightly coat with mayonnaise.
- 9
Step 9

The next layer — potato — lightly salt and spread with mayonnaise.
- 10
Step 10

Now — the carrot layer. We also salt it and spread the sauce on it.
- 11
Step 11

And finally, a layer of grated egg whites. We also brush this with mayonnaise.
- 12
Step 12

We make mice from quail eggs. Ears and tails are cut out from thin slices of cheese and inserted into slits in the egg, nose and eyes — peppercorns.
- 13
Step 13

Sprinkle the salad with crushed egg yolks, place the "mice" wherever you like. Let the salad sit for at least 2 hours.
