
Avocado Salad
Description
Perfect for everyday meals. Let's prepare a simple "Mexican" avocado salad! Instead of cherry tomatoes, you can use regular tomatoes. The salad should be served immediately, as avocado darkens very quickly (that's why we use lemon juice in this recipe to slow down the darkening process). Garnish optionally and serve.

Preheat the oven. Line a baking sheet with a sheet of foil, grease with oil, and place the corn cobs and peppers, cut lengthwise into two parts, on it. Season everything with salt and pepper. Put in the oven for about 5–10 minutes.

Remove the cooked corn, as shown in the photo.

Peel the cooked pepper and finely chop it.

Cut the cherry tomatoes in half. Peel the avocado, dice it, place it in a salad bowl, sprinkle with lime juice, and mix. Add all the chopped ingredients to the salad bowl and mix well.
