
Salad "Red Summer"
Description
A simple dish to prepare. Make this salad with young beets, which are pleasant to eat raw. Adding plums (preferably tart-sweet and firm) and orange gives the salad a very pleasant fruity note. Use oil with a mild flavor, such as pumpkin seed oil. Serve chilled.

Slice the young beetroot thinly into thin strips and drizzle with 1 teaspoon of lemon juice.

Thinly slice the red cabbage, lightly rub with salt, and squeeze out the excess juice.

Mix the cabbage with the beet, lightly drizzle with oil and stir, so that these bright vegetables don't color the entire salad.

Add sliced plums, peeled and filleted orange, canned corn, and a small sweet pepper.

Mix honey with lemon juice. You can add the orange juice left over from preparing the orange. Pour in the oil and whisk the dressing with a fork. Pour over the salad and toss. Sprinkle with chopped green onions, dill, and sunflower seeds. Serve immediately.
