
Mushroom salad with oyster mushrooms
Description
This salad was a big hit with my guests—filling yet delicate, it doesn't overpower the taste of side dishes but rather enhances them. That said, you can also serve it as a main dish—it's that tasty and satisfying :) So let's see how to make the "Forest Glade" salad with oyster mushrooms so that your guests will clear it off the table in no time: 1. First, boil the potatoes in salted water, while taking out the meat and oyster mushrooms to thaw. 2. Meanwhile, peel and finely chop the onion (the cutting method isn't crucial here, as the onion will be sautéed later—more on that below), and grate the cheese on a coarse grater. Set the cheese aside for now. 3. Once the boiled potatoes have cooled, grate them as well. Roughly chop the mushrooms and cut the meat into small cubes. (Again, for this simple "Forest Glade" salad recipe, precise cutting isn't essential, but cubed meat will cook faster and look better in the finished salad :) 4. Heat two frying pans with vegetable oil, and divide the chopped onion evenly between them. Sauté the onion as usual, and once it's halfway cooked, add the meat to one pan and the oyster mushrooms to the other. 5. Increase the heat slightly above medium, add salt, pepper, and seasonings to taste, then cover and cook until fully done. 6. Now our "Forest Glade" salad with oyster mushrooms is almost ready. Simply take a nice serving dish and layer the ingredients in this order: first the grated potatoes, then the mushrooms, then the meat, then mayonnaise, grated cheese, and another layer of mayonnaise. Decorate the salad as you like (you could experiment with oyster mushroom caps if you have large mushrooms, or simply garnish with fresh herbs). Finally, let the salad chill in the refrigerator for a couple of hours to let the flavors blend, and then serve.
