The salad is quick and easy to prepare. Despite the fairly large number of ingredients, they are all inexpensive and available in almost every home, especially in summer. So this simple chicken salad with tomatoes recipe will come in handy for any summer gathering. 1. First, if necessary, defrost the chicken and place it in a pot to boil in salted water. 2. If you're using fresh instead of canned corn, boil 1-2 cobs as well. 3. Wash all the vegetables (except garlic) thoroughly and chop them into small cubes. Place them into a bowl. 4. Grate the cheese on a coarse grater, or cut into small cubes. 5. Combine all ingredients in one bowl, adding the corn and cooked chicken fillet as they become ready. 6. In a separate dish, mix the dressing ingredients—vinegar, mustard, olive oil, salt, pepper—and squeeze in a clove of garlic. Mix thoroughly and pour over the salad. Your homemade chicken salad with tomatoes is ready! I especially like serving this light salad with croutons and a garnish of fresh herbs. I don't always add corn—it's delicious even without it.
