Salad with ham, rice, corn, and cucumber
Description
Surprise and delight your guests with an unusual yet very tasty salad on New Year's Eve. The recipe is quite simple: all ingredients are finely chopped, mixed with mayonnaise, then arranged on a plate in the shape of a rabbit. The result looks very original, and the flavor of the dish speaks for itself! Ham, rice, corn, and cucumber make a perfect and harmonious combination. Definitely worth saving this recipe!

Prepare all the ingredients.

Rinse the rice thoroughly and add water in a 1:2 ratio (one part rice to two parts water). Place on the stove and, once boiling, reduce the heat and cook for about 15 minutes (until done). Let the cooked rice cool slightly.

Peel the hard-boiled eggs and grate them on a coarse grater. Transfer to a deep bowl.

Add diced ham. I used chicken ham, but you can use any type you prefer.

Cut the cucumber into cubes of approximately the same size.

Drain the liquid from the corn and add it to the other ingredients.

Chop the onion into small cubes, and to remove bitterness, you can briefly pour boiling water over the onion beforehand.

At the end, add cooked rice, salt, and ground pepper to taste.

Dress the salad with mayonnaise and mix well.

Place the salad on a flat dish, shaping it into the body and head of a rabbit.

Grate part of the cheese on a fine grater and use it to cover the rabbit shape.

From the leftover cheese, cut out rabbit ears and other decorative elements. I used a cookie cutter to cut a flower shape from the cheese. Similarly, cut decorative elements and ears from the ham, making them slightly smaller than the cheese ones. Slice the remaining ham into strips about 1 cm wide and long enough to fit around the rabbit's neck.

Combine the cheese and ham "ears." Attach toothpicks or skewers to the base. If the ears don't hold, use two more toothpicks.

Place the ham strips on the rabbit's neck. Attach decorative elements on one side, such as flowers or stars. Position the ears. Use olives for the eyes and ham for the rabbit's nose. The "Rabbit" salad with ham, rice, corn, and cucumber is ready for the New Year 2023!
