
Potato salad with pickled cucumbers

The recipe won't take much time. I especially like this potato salad because of the cucumbers: they make it very tangy, while the onion adds a sharp note. By the way, to make potato salad with pickled cucumbers, you can use a red onion. This will make the salad milder and less sharp. Serve at the table.

Prepare the ingredients, peel the potatoes and put them on to boil. But don't overcook them.

While the potatoes are boiling, chop the cucumbers and onion into small cubes. By the way, if you're using white onion (which is usually quite sharp), soak it in the brine from the pickles.

Cut the boiled potatoes into cubes, add all the other ingredients (don't forget to drain the marinade from the onions), as well as chopped herbs.
