
Salad for borscht
Description
A simple dish to prepare. In my family, everyone loves borscht, but only my husband eats beans. So that he doesn't miss out on enjoying borscht with beans, I make this bean salad on the side. The recipe for this borscht accompaniment salad is easy. The only downside is that the beans need to be prepared in advance. You can use canned beans from the store to speed up the process. The salad is tasty, with a sharp garlic flavor and the aroma of fresh herbs. I hope you'll like it :) Serve chilled.

Soak the beans in cold water for 4-5 hours, or preferably overnight. Then drain the water, cover the beans with boiling water, and cook for 1 to 1.5 hours until tender. The beans should be soft but not mushy.

Peel the onion, cut into cubes or half-rings, and fry in vegetable oil until golden brown.

Chop the shelled walnuts. It's best to do this with a rolling pin.

Peel the garlic and grate finely or press through a garlic press.

When the beans are cooked, drain the water. Cool the beans and transfer them to a salad bowl. Add fried onions, nuts, and garlic. Season with salt and pepper.

Mix the salad and let it steep for about 30 minutes. Then chop the herbs and add them to the salad.
